2015 winner of the Meilleur Ouvrier de France (Best Craftsman of France) award in the cuisine-gastronomy category and new Chef of La Réserve Genève, Virginie Basselot electrifies her solid classical foundations with contemporary yet delicate touches of brilliance.

Pumpkin and chestnut ravioli, watercress coulis, white Alba truffle shavings, spider crab rolled in a green apple and wasabi remoulade, red lentil coulis… Unexpected associations, sophisticated presentation and impeccable execution combine to offer a brilliantly self-evident gourmet experience. Each savor reveals itself distinctly and in all its true intensity. 

Loyal to her native Normandy, Virginie Basselot has added a few personal nods to her menu, through seafood, and even more movingly in her signature dish: cod fillet in the pan with lemon balm butter. It is served on a bed of pearl tapioca, evoking “childhood memories of my grandmother’s cooking, since she often took care of me because my parents were in the restaurant business”, as she explains. A cult recipe for connoisseurs.

Virginie Basselot is passionate about the quest for authentic produce and also wishes to give a leading role to locally grown food, convinced that “it’s important that guests at La Réserve can enjoy local specialties”. Instinctively keen to discover the gems offered by regional producers, she has already chosen her star poultry, “Nant d’Avril”, served roasted with cocoa nibs, Jerusalem artichokes and coffee gravy.

The Tse' Fung , Michelin Starred restaurant

The Tsé Fung, Michelin-starred restaurant, offers a new menu by Frank Xu.

In just a few months, Frank Xu successfully elevated Cantonese cuisine to haute gastronomy status at a major Parisian establishment. Today, he looks forward to introducing people to his cuisine at La Réserve Genève. Originally from Shenzhen, representing the third generation of a family of chefs and with more than 30 years’ experience behind him, he presents a menu offering Tsé Fung classics revisited with great subtlety alongside the best of Cantonese cuisine. Roasting will play a key role among cooking methods. The result will be a range of precisely flavored spicy gourmet dishes displaying scrupulous respect for tradition and embodying the peak of culinary refinement.
The décor of red velvet, black lacquer and silk hangings has been further enhanced and continues to take diners back to the atmosphere of a 1930s Shanghai grand palace hotel. The Tsé Fung teams look forward to welcoming you, whether in the main restaurant, in private rooms for total peace or on the terrace offering a wonderful view over the Alps and Lake Léman.

The Spa Restaurant

A delightful, intimate space with a plush, light-filled atmosphere. Just 25 seats to maintain the quiet serenity of the setting. The teak terrace invites you to enjoy a relaxing interlude with the arrival of the warm, sunny weather.

Chef Eric Canino, former chef with Michel Guérard, and now at La Réserve Ramatuelle, shares his delicious concept of healthy cooking, in harmony with all the benefits of the Spa. It reflects his love for light, intensely flavored dishes.

At the Café Lauren, fats are banned – only delicate, delicious olive oil is used. And each dish is meticulously prepared to achieve the perfect balance between greater pleasure and fewer calories. For desserts, refined sugar is replaced by raw sugar.

A unique meal at Le Café Lauren is its special breakfast entirely tailored to your well-being: whole wheat bread, seasonal fruit jam with no added sugar, tea-infused prune, a delicious smoothy different each day... to a healthy start.

Skating Rink

Until February 11th 2018

On Wednesdays and Saturdays, an indoor skating rink taking the place of the Summer Lodge terrace welcomes children who can slip into the skates on complimentary loan and set off across the ice! After racing each other and attempting various acrobatic figures amid bursts of laughter, it's time to head to the cozy adjacent tent, where hungry little intrepid skaters can enjoy crepes, waffles, creamy chocolate and soft drinks.

Every Sunday, children can brunch with their parents at the Loti restaurant or at the bar, or have lunch at the Tsé Fung. When dessert time rolls around, they have permission to slip off to the skating rink where a delightful buffet of sweet treats and soft drinks awaits them. And that’s not all! They can also have a whirl on the ice under the supervision of an instructor, and enjoy themselves with the team of activity leaders in the various workshops specially organized for them: crafts, makeup, creative leisure pastimes…

Summer Kids Camp

This summer, La Réserve Genève is organizing multisport courses over five days.

With groups divided according to age and experience, your kids between 6 and 13 years old will be involved in tennis and watersports, as well as engaging in the joys of fun, recreational activities in the hotel grounds. At lunchtime or for afternoon tea, they’ll all get together to share tales of their exploits… Guaranteed giggles and plenty of memories!

The Café Lauren, the Spa Restaurant

Chef Eric Canino, former chef with Michel Guérard, and now at La Réserve Ramatuelle, shares his delicious concept of healthy cooking, in harmony with all the benefits of the Spa. It reflects his love for light, intensely flavored dishes.

At the Café Lauren, fats are banned – only delicate, delicious olive oil is used. And each dish is meticulously prepared to achieve the perfect balance between greater pleasure and fewer calories. For desserts, refined sugar is replaced by raw sugar.

In this way, all Nescens better-aging programs begin with an indepth diagnostic phase. This overview is conducted by a multidisciplinary team from the spa which combines complementary expertise (preventive medicine, osteopathy, nutrition) to enable overall better-aging treatment. The different components of the program (nutrition, physical activity, treatment) are personalized by medical teams who supervise the expert contingent (coaches, therapists, etc.).
